Fresh Tomato-Cilantro Salsa from Diana's kitchen
fresh tomatoes, coarsely chopped
sweet onion, chopped, about 1/4 cup
1/4 cup cilantro, chopped
garlic clove, finely chopped
few sprinkles of cayenne (according to taste)
a little fresh ground pepper
kosher salt, to taste
Tablespoon vinegar or lime juice
Simply chop all these fresh ingredients and allow flavors to meld for at least 30 minutes before serving on or with anything... with chips, on a fajita, with morning eggs...
Hope your tomatoes are ripening Sherri. XO

My Version
Yesterday I went to the store with Katiebee's recipe in hand and picked up the ingredients to try it out for myself. This morning, knowing I had a dental appointment in the afternoon that would rule out the need for a steak knife at dinner, I set out to fill up the crockpot with the makings for the soup.
This recipe is a cinch to put together and, as I found out, very easy to get along with and happy to welcome anyone to the party.
Here's what I added:
About -
1 Cup of diced ham
2 chopped carrots
1/4 t. poultry seasoning
1 T. Worcestershire Sauce
1 capful of vinegar
The recipe that Katiebee sent in is a keeper for me, on it's own or with anything else you want to add...Thanks Katie!
